Sensory Standards for Frozen French Fries
Sensory evaluation is the final quality gate before product release. While laboratory data tells us whether specifications are met, sensory analysis tells us whether the product tastes, looks, and feels right. At Dinweys, every production batch undergoes sensory evaluation before release.
Color Reference Standards
Fry color is evaluated against the USDA Color Standards for Frozen French Fries (USDA Agricultural Marketing Service), which defines six color categories:

Color Evaluation Method
- Sample preparation: Cook 500 g of frozen fries in fresh oil at 175°C (±2°C) for the standard time per cut size
- Allow to drain and cool for 60 seconds
- Spread evenly on a white evaluation surface under standardized lighting (D65 daylight, 1000 lux minimum)
- Compare against USDA color chart — note both the predominant color grade and the range

Key Insight: The human eye can distinguish approximately 10 distinct shades within the USDA Color 1–2 range. For consistent evaluation, use the same lighting conditions and trained panelists. Colorimeters (HunterLab or Minolta) can provide L, a, b values for objective measurement: L 55–65 = Color 0–1 range.
Texture Grading Scale
Texture is evaluated after cooking under standardized conditions. The evaluation examines three distinct zones:

Key Insight: Coated fries consistently score 0.5–1.0 points higher on the texture scale compared to uncoated equivalents of the same cut size and dry matter. The coating provides both structural reinforcement and a moisture barrier that keeps the crust crisp longer.
