Frying oil is both a heat transfer medium and a food ingredient. Its quality directly affects fry color, flavor, texture, shelf life, and production cost. Proper oil management is one of the highest-ROI operational practices in a French fry facility.

Key Insight: Palm olein is the industry standard for par-frying due to its oxidative stability (high oleic content), neutral flavor, and cost-effectiveness. Dinweys primarily uses palm olein but can switch to canola or sunflower on request for OEM runs.

Total Polar Materials (TPM) — The Key Indicator
TPM is the single most important parameter for frying oil quality. It measures the total percentage of degraded oil compounds (oxidized triglycerides, dimeric/polymeric triglycerides, and free fatty acids).

Key Insight: Most regulatory limits (including many HACCP plans) set the maximum TPM at 24–25%. However, by the time TPM reaches 20%, the oil is already producing darker fries and off-flavors. For premium quality, the operational target should be <18% TPM.

Oil Replenishment Strategy
Continuous oil replenishment (adding fresh oil to compensate for oil absorbed by the product) extends the usable life of the fryer oil:
